Applicable sales tax per product must be defined under product settings.
Select the product you want to define the product tax for and click edit.
Click on the Tax tab.
Click on Tax Status (1) and make a selection between Taxable, Shipping Only or None.
Click on Tax Class (2) and make a selection from the drop-down selection box.
